The Parador de Olite, conveniently located between Pamplona and Zaragoza, occupies a wing of a castle-palace built in the early 14th century as a summer residence by King Charles III of Navarre, known as ‘Charles the Noble’. The exterior of the building features many towers, battlements and Gothic windows, and the medieval atmosphere is maintained in the interior, with archways, stained glass, wooden furniture, armour, wrought-iron chandeliers and richly coloured wall hangings. The town of Olite, with its many bodegas (cellars), is known as the wine capital of Navarre, and the restaurant offers a variety of local wines to go with such regional dishes as Bacalao ajoarriero (salt cod with garlic, peppers and onions), Pimentos rellenos (stuffed red peppers) and Magras de cerdo con tomate (ham cooked in a tomato sauce).
